Návod na prípravu ceremoniálnej matchy

Príprava ceremoniálnej japonskej matchy je viac než len príprava čaju – je to vedomý rituál, ktorý zvýrazní kvalitu prvej úrody (1st flush), jemnú umami chuť a prirodzený charakter zeleného čaju v prášku. Pri dodržaní správneho postupu vynikne intenzívna smaragdovo zelená farba, krémová pena a harmonicky vyvážená chuť bez výraznej horkosti.

Tradičný postup prípravy matcha čaju

1. Preosiatie pre jemnú textúru


Do keramickej misky (chawan) preosejte 1–2 g ceremoniálnej matchy (približne ½–1 bambusovej lyžičky – chasaku). Preosiatie zabezpečí hladkú konzistenciu bez hrudiek a umožní rovnomerné vyšľahanie. Neodporúčame používať kovovú lyžičku, aby sa zachovala autentická chuť, aróma a farba matchy.

2. Správna teplota vody

Pridajte 70–80 ml horúcej vody s teplotou približne 70–80 °C. Voda by nemala vrieť, aby sa zachovala jemná chuť, prirodzené aminokyseliny (vrátane L-theanínu) a kvalita japonskej matchy.

3. Šľahanie do krémovej peny

Pomocou bambusovej metličky (chasen) šľahajte rýchlymi, energickými pohybmi zápästia v tvare písmena „M“ alebo „W“, kým sa nevytvorí hustá, jemná pena so zamatovou textúrou a rovnomernou zelenou farbou.

4. Okamžité vychutnanie
